Chocolate Peppermint Cookie Sandwiches

Yields: 20 Cookie Sandwiches
Ingredients:
1 box Betty Crocker® Devil’s Food Cake Mix
¼ cup water
3 egg yolks
½ cup vegetable oil
¼ cup sour cream
½ tsp peppermint flavor
2 pouches Betty Crocker® Chocolate Cookie Crème
1 bottle Betty Crocker® Peppermint Sugar
Instructions:
1. Preheat oven to 350 °F. In a mixing bowl, beat together cake mix, water, egg yolks, sour cream, oil, and peppermint flavor until combined.
2. Spoon tablespoon sized balls onto parchment lined cookie sheets. Bake for 13-16 minutes, or until cookies spring back when lightly touched. Cool completely.
3. Fill cookies with 1 tablespoon of Chocolate Cookie Crème.
4. Sprinkle tops with Peppermint Sugar.
