Owl Cookie Creme Sandwiches

Yields: 12 cookie sandwiches

Ingredients:

2 ¾ cups flour
¾ cup cocoa powder
½ teaspoon salt
1 tsp baking powder
1 cup unsalted butter, softened
1 ¾ cups granulated sugar
2 large eggs
2 tsp vanilla extract
2 pouches Betty Crocker® Vanilla Cookie Crème
1 bottle Betty Crocker® Chocolate Sprinkles
Cake Mate® Writing Icing Classic Colors
24 candy coated chocolates

Instructions:

1. Whisk together the flour, cocoa powder, salt, and baking powder in a small bowl.

2. Beat butter and sugar with electric mixer until light and creamy.

3. Beat in eggs and vanilla.

4. Stir in the flour mixture until a uniform dough is formed.

5. Cover dough, and then chill in refrigerator for about an hour.

6. Preheat oven to 350°F and then roll out chilled dough to ¼ inch thickness.

7. Use a 2-3 inch circle cookie cutter or glass to cut out circles for the owl’s head.

8. Use the cap from the Chocolate Sprinkle bottle to cut the eyes from half of the circles.

9. Cut triangles from the small circle scraps and press into owl’s head.

10. Apply chocolates sprinkles to the ears and tops of the heads by pressing them into the dough.

11. Carefully place cookies onto parchment lined cookie sheet and bake for 5-7 minutes.

12. Cool cookies completely.

13. Squeeze 2 Tbsp of the Cookie Creme onto the whole circle cookies and then place the owl shaped heads on top of each.

14. Apply a small amount of pressure so that some of the icing comes out of the eye holes.

15. Place the candy coated chocolates into the eye holes.

16. Draw beaks with the Writing Icing.
